Teriyaki Salmon & Rice

Salmon for the omega-3s, rice for the recovery carbs, a quick soy glaze to make it eat well — a proper post-training dinner in twenty minutes.

INGREDIENTS
  1. 150 g salmon fillet
  2. 70 g rice, dry weight
  3. 100 g broccoli or pak choi
  4. 2 tbsp soy sauce, 1 tbsp honey, 1 tsp ginger
  5. 1 clove garlic, sesame seeds
METHOD
  1. 01Cook the rice. Simmer the soy, honey, ginger and garlic for 2 minutes until slightly syrupy.
  2. 02Sear the salmon skin-side down 4 minutes, flip for 2, then spoon over the glaze to coat.
  3. 03Steam the greens.
  4. 04Serve over the rice with the pan glaze and a scatter of sesame.
NOTES & SWAPS

Use tamari to keep it gluten-free. Frozen salmon works; just pat it dry before it hits the pan.
