Slow-Cooker Goat Curry

Goat is one of the leanest red meats going. Slow-cook a big batch, portion it out, and you've got 40 g-protein dinners stacked in the freezer.

INGREDIENTS
  1. 800 g bone-in goat, cut for curry
  2. 2 onions, 5 cloves garlic, 2 tbsp ginger
  3. 2 tbsp curry powder, 1 tsp cumin, turmeric
  4. 2 tbsp oil, 400 g chopped tomatoes
  5. 2 potatoes, salt
METHOD
  1. 01Brown the goat in the oil, then tip into the slow cooker.
  2. 02Soften the onions, garlic, ginger and spices, and add to the pot with the tomatoes and 400 ml water.
  3. 03Cook on low 6–8 hours (or simmer on the hob 2–3 hours) until the meat pulls from the bone.
  4. 04Add the potatoes for the last hour. Portion into four.
NOTES & SWAPS

Four servings, macros without rice. A pressure cooker does it in about 45 minutes. Freezes well — this is a batch-cook, not a weeknight rush.
