INGREDIENTS
  1. 150 g salmon fillet
  2. 200 g sweet potato
  3. 100 g tenderstem broccoli or green beans
  4. 1 tbsp olive oil
  5. 1/2 lemon
  6. Salt, pepper, dill
METHOD
  1. 01Heat the oven to 200°C. Cube the sweet potato, toss in half the oil, and roast for 25 minutes.
  2. 02Add the salmon and greens to the tray for the last 12–14 minutes.
  3. 03Squeeze over the lemon, scatter the dill, and season.
NOTES & SWAPS

Any oily fish works — mackerel or trout. Skin-on salmon holds together better on the tray.
