Peanut Tofu Noodles

INGREDIENTS
  1. 150 g firm tofu, pressed and cubed
  2. 80 g noodles
  3. 150 g stir-fry vegetables
  4. 1 tbsp peanut butter
  5. 1 tbsp soy sauce, 1 tsp maple syrup, lime
  6. 1 tsp oil, garlic, chilli
METHOD
  1. 01Cook the noodles and set aside. Whisk the peanut butter, soy, maple, lime and a splash of water into a sauce.
  2. 02Fry the tofu in the oil until golden, then set aside.
  3. 03Stir-fry the garlic, chilli and vegetables for 3 minutes.
  4. 04Return the tofu and noodles, pour over the sauce, and toss to coat.
NOTES & SWAPS

Use tamari and rice noodles to keep it gluten-free. Top with crushed peanuts and spring onion.
