Paneer Bhurji with Roti
Crumbled paneer cooked dry with onion and tomato, with one roti. The highest-protein vegetarian breakfast that still tastes like breakfast.

- →100 g low-fat paneer, crumbled
- →1/2 onion, finely diced
- →1 small tomato, diced
- →1 green chilli, chopped
- →1/4 tsp turmeric, 1/4 tsp jeera
- →1 tsp oil
- →1 roti (30 g atta)
- →Coriander, salt
- 01Heat the oil, crackle the jeera, and soften the onion for 3 minutes.
- 02Add the tomato, chilli, turmeric and salt. Cook until the tomato breaks down, about 3 minutes.
- 03Fold in the crumbled paneer and cook 2 minutes — no longer, or it goes rubbery.
- 04Finish with coriander and serve with the roti.
Low-fat paneer, not full-fat: it saves about 85 kcal for the same protein. Keep it dry — this is a bhurji, not a gravy.
