INGREDIENTS
  1. 200 g paneer, cubed
  2. 300 g spinach
  3. 1 onion, 3 cloves garlic, 1 tbsp ginger
  4. 1 tomato
  5. 1 tbsp oil or ghee
  6. 1 tsp cumin, 1/2 tsp garam masala, salt
  7. 2 tbsp yogurt or cream
METHOD
  1. 01Blanch the spinach for a minute, then blend to a purée.
  2. 02Fry the cumin, then soften the onion, garlic, ginger and tomato in the oil.
  3. 03Add the spinach purée and spices, simmer 5 minutes, then stir in the yogurt.
  4. 04Fold in the paneer and warm through. Serve with rice or roti.
NOTES & SWAPS

Lightly pan-fry the paneer first if you like firmer cubes. Macros are for the curry alone.
