Moong Dal Chilla
A savoury lentil pancake — the highest-protein Indian breakfast going, and it cooks in minutes.

- →100 g yellow moong dal, soaked 2–3 hours
- →1 green chilli
- →1 tsp grated ginger
- →1/4 tsp turmeric
- →1 handful coriander, chopped
- →1/2 onion, finely diced
- →1 tsp oil, salt
- 01Drain the soaked dal and blend with the chilli, ginger, turmeric and a splash of water to a smooth, pourable batter. Season.
- 02Stir in the onion and coriander.
- 03Heat a non-stick pan, brush with oil, and pour a ladle of batter, spreading it thin.
- 04Cook 3–4 minutes a side until golden and set. Repeat.
Makes two chillas. Add a spoon of grated paneer or a side of curd to push the protein higher. Great with green chutney.
