Moong Dal Chilla

INGREDIENTS
  1. 100 g yellow moong dal, soaked 2–3 hours
  2. 1 green chilli
  3. 1 tsp grated ginger
  4. 1/4 tsp turmeric
  5. 1 handful coriander, chopped
  6. 1/2 onion, finely diced
  7. 1 tsp oil, salt
METHOD
  1. 01Drain the soaked dal and blend with the chilli, ginger, turmeric and a splash of water to a smooth, pourable batter. Season.
  2. 02Stir in the onion and coriander.
  3. 03Heat a non-stick pan, brush with oil, and pour a ladle of batter, spreading it thin.
  4. 04Cook 3–4 minutes a side until golden and set. Repeat.
NOTES & SWAPS

Makes two chillas. Add a spoon of grated paneer or a side of curd to push the protein higher. Great with green chutney.
