INGREDIENTS
  1. 300 g dried red lentils
  2. 1 onion, diced
  3. 2 cloves garlic
  4. 1 tbsp ginger, grated
  5. 1 tbsp curry powder or garam masala
  6. 400 ml coconut milk (light)
  7. 400 g chopped tomatoes
  8. 200 g spinach
  9. 1 tbsp oil, salt
METHOD
  1. 01Soften the onion, garlic and ginger in the oil for 5 minutes. Stir in the spices.
  2. 02Add the rinsed lentils, tomatoes, coconut milk and 400 ml water. Simmer 25–30 minutes until the lentils break down.
  3. 03Fold in the spinach until wilted, season, and serve — over rice for a bigger meal.
