INGREDIENTS
  1. 6 egg whites (about 200 g carton)
  2. 2 whole eggs
  3. 1 handful spinach
  4. 1 tsp oil
  5. Salt, pepper, hot sauce
METHOD
  1. 01Beat the whites and whole eggs together with salt and pepper.
  2. 02Wilt the spinach in the oil over medium heat.
  3. 03Pour in the eggs and stir gently until just set — pull them off while still soft.
NOTES & SWAPS

Carton whites make this quick and cheap. Add 40 g grated cheese if you're bulking and want the calories up.
