Egg Fried Rice

The classic use for last night's rice — fast, filling and an easy way to get eggs into a savoury meal.

INGREDIENTS
  1. 200 g cooked rice, cold
  2. 3 eggs, beaten
  3. 100 g frozen peas and sweetcorn
  4. 2 spring onions
  5. 1 tbsp soy sauce, 1 tsp sesame oil
  6. Ginger and garlic
METHOD
  1. 01Scramble the eggs in a hot oiled wok, then set aside.
  2. 02Stir-fry the ginger, garlic and vegetables for 2 minutes.
  3. 03Add the cold rice and fry hard for 3–4 minutes, breaking up any clumps.
  4. 04Return the egg, add the soy and sesame oil, toss, and finish with spring onion.
NOTES & SWAPS

Cold, day-old rice fries far better than fresh. Add tofu or edamame for more protein.
