Egg Fried Rice
The classic use for last night's rice — fast, filling and an easy way to get eggs into a savoury meal.

- →200 g cooked rice, cold
- →3 eggs, beaten
- →100 g frozen peas and sweetcorn
- →2 spring onions
- →1 tbsp soy sauce, 1 tsp sesame oil
- →Ginger and garlic
- 01Scramble the eggs in a hot oiled wok, then set aside.
- 02Stir-fry the ginger, garlic and vegetables for 2 minutes.
- 03Add the cold rice and fry hard for 3–4 minutes, breaking up any clumps.
- 04Return the egg, add the soy and sesame oil, toss, and finish with spring onion.
Cold, day-old rice fries far better than fresh. Add tofu or edamame for more protein.
