Besan Chilla with Curd
Two savoury chickpea-flour pancakes off a tawa with a bowl of curd. Ten minutes, one pan, and it holds you to lunch.

- →50 g besan (chickpea flour)
- →1/2 onion, finely diced
- →1 small tomato, finely diced
- →1 green chilli, chopped
- →1/4 tsp turmeric, 1/4 tsp ajwain
- →1 handful coriander, chopped
- →1 tsp oil
- →100 g curd (dahi), toned

- 01Whisk the besan with about 100 ml water, the turmeric, ajwain and salt to a smooth batter the thickness of pouring cream. Rest it 5 minutes.
- 02Stir in the onion, tomato, chilli and coriander.
- 03Heat a non-stick tawa on medium, brush with half the oil, and pour half the batter. Spread it thin with the back of the ladle.
- 04Cook 3 minutes until the edges lift, flip, and cook 2 minutes more. Repeat with the rest.
- 05Serve both chillas with the curd on the side.
The 50 g of besan is the number that matters — eyeballing it is how a 310 kcal breakfast becomes a 500 kcal one. Add 30 g of grated paneer to the batter to push protein to about 23 g.
