Baked Chicken Thighs & Potatoes

One tray, minimal effort — thighs roasted over potatoes with greens on the side. Higher-calorie than breast, so it's a solid clean-bulk dinner.

INGREDIENTS
  1. 4 chicken thighs (bone-in or boneless)
  2. 400 g potatoes, cut into chunks
  3. 1 tbsp olive oil
  4. Paprika, oregano, garlic, salt, pepper
  5. 150 g green beans or broccoli
METHOD
  1. 01Heat the oven to 200°C. Toss the potatoes with half the oil and season, and spread on a tray.
  2. 02Rub the thighs with the rest of the oil and the spices, and sit them on top.
  3. 03Roast 35–40 minutes until the chicken hits 74°C.
  4. 04Steam the greens and serve.
NOTES & SWAPS

Pull the skin off after cooking to cut the fat, or use boneless skinless thighs to start leaner. Serves two; doubles for meal prep.
